Whats the best way to cook 100 Hotdogs?

My pack is running a food booth at a Library festival. We plan to sell hotdogs, sodas and chips. The sale will last four hours (10:00 - 2:00). What is the best way to have ready-made hotdogs over and an extended period of time?

I would boil them.

 

What are the facilities available? Can you cook on site?

 

Even if you have to cook off-site boiling would be quick. Have a camp stove set up where ever it is permissible (by booth, outside in parking lot, etc). Have warming trays set up in the booth. The kind with canned heat, a metal frame, a foil pan with water in it, & another over that with the cooked dogs covered in foil. The frames, heat & foil pans can be found in most party/card stores. You can have another warmer set up with buns. When you get low you simply switch out foil pans.

 

You can also have a charcoal grill set up outside if you would rather grill than boil.

You might also consider contacting your local health department for recommendations/suggestions on proper sanitation.

 

You could get 100 people very sick without proper sanitation.

 

At the very least...

 

Make sure your hot dogs are kept hot enough to prevent bacterial growth. Best to keep them above 135 degrees F. If cooler than that, limit cool time to less than two hours.

 

Keep uncooked hot dogs cold - below 41 degrees F - in a cooler with ice ON TOP of the dogs. Cool air from ice travels downward.

 

Cover food to keep contaminates/flies off of it.

 

Keep sick people (coughing/sneezing) away from the food.

 

Make sure all serving gear has been sanitized in a bleach solution (1 tbsp chlorine bleach per gallon clean water - soak for 2 minutes).

 

Make sure servers fingernails are trimmed and clean. Have servers wash hands regularly, or better yet, wear plastic gloves that are also changed regularly.

Selling the dog is different than feeding the dog, as you guessed. When feeding 100 or 200, you can use a large kettle to boil large amounts quickly. There will be little wait time with a long line and having a couple of tables with condiments for people to pass by on either side at the ready. When selling, there will be wait time so you will need to boil a smaller amount and have them ready for a few customers that are in line waiting. Keeping them warm is the key, as has already been stated. Keeping the uncooked dogs cold is the next key. Also, since it is a fund raiser, your Scout Office should be informed and you need to check with the city health department for their restrictions. This one is more difficult than just sticking a wire through a dog and slapping it on the fire.

We cook hotdogs for a Pack meeting. We used propane fryers.

 

The type where you fry a whole chicken or turkey in a 28-35 qt pot. We just filled it with water instead of oil. 10 minutes later the water is boiling. We thru in 50 dogs at a time and 10 more minutes and we were ready to serve.
