Hello Rik;
I was going to pass up replying but felt I should.

For this demo kill two birds with one demo:-)

For Leave No Trace lay a sheet of plywood on the parking lot and
place 3 to 4 inches of sand on top. Have your coals on top of the
sand. Explain that this is also how you would build a firebed in the
wilderness when you did not have a good spot for cooking that does not
have mineral soil(no humus in the soil so the soil itself will not
support plant life to start with) and that the sand can come from the
lake side or stream side or other locations in the wilderness and
returned when you are done cooking. Instead of plywood you could use a
plastic tarp or ground cloth. This way you teach both No Pot Cooking
and Leave No Trace.

The sand could be from bags used as weight in some vehicles and
afterward donated to someone's sandbox.
