Still dishwashing

My wife is a cafeteria manager for a "middle school" (Jr. High) here
in Phoenix. All the mangers in the district food service were just
sent thru a new federally mandated certification test/training that
changed many of the old procedures. As of that class, the dish-
washing method was not changed.
It remains:
1. Wash
2. _Hot_ rinse (Hot enough to kill any baceria.)
3. Lukewarm sanitizing rinse. (They use bleach.)
The school serves 400-600 meals per day.
I would have taken care of this over the weekend, but something
has gone haywire over at ASU with the mail hub, or the listserver
fouled up on th edu domain. I suspect it's the former. In any case,
I didn't see this until noon Monday.
