I just saw this question come up, and figured I would ask the expert.
I called my wife, a school cafeteria manager, and asked her.
The answer is:
Child - 2 oz.
Adult - 3 oz.
That's the figure that they use at her cafeteria.
That varies from 2-3 slices per oz., depending on how it is sliced.
The thicker the slice, the higher the weight.
The is a _standard_ serving, remember. We usually don't do calculations
for a Dagwood Bumstead serving. ;)
