Cold Dutch Oven Cooking

Our troop just had a campout, conducted by a Mountain Man from the Lions Club
(our sponsering organization), and some of his friends. As part of the events
they did a dutch oven demonstration, and also discussed there use. I know that
this has been discussed here quite a bit, but they had mentioned something that
was not part of our discussion.
It was stated that dutch ovens can not only be used as oven, but also as a
refrigeration device to keep items cold. He stated that he had used it to make
cheese cakes (no-bake type), but was looking for other recepies, uses etc...
Has anyone on this list used a dutch oven in such a manner? (Cold not Hot)
If so, what tips, ideas, or recepies could you suggest??
Any thoughts on this will be appreciated.
