Jim and George,
Some things depend on size of facilities. At our (New Orleans Area Council)
camp (Salmen Scout Reservation) our dining hall was a serious (insert anything
you want to put here to describe NIGHTMARE). We have fed upwards of 400
at once in a "overblown bunch of trailers" we called a dining hall for 8
years. It could do 150 well.
But, that is all past.. Last week we dedicated and use a BRAND NEW 500
seat "Cadilac class" dining hall. We were feeding 340 people. The longest
time it took was 27 minutes to get all throught the serving line.
Merit Badge classes and other things can be handled with additional trained
staff, and breaking classes into smaller groups. But, a lack of facilities
in the dining hall area can turn a week in to a nightmare... Ask us down
here in New Orleans. We lived with our ridculously unworkable kitchen and
cantakerous equipment for too many years.
We now have a walk in freezer, and refrigerator and pantry, not 100 yards
away, but in the same room as the kitchen. Our cook, who can turn out
incredible meals, is in heaven.
Our tables in the dining halls are the one piece variety that you see in new
schools. The seats are attached and fold up vertically and can be rolled out
of the way to mop the floor.
