I regularly steam corn in the husks and have never had a problem with finding
borers; if it were to occur, the situation would be immediately recognizable
by visual inspection and the ear disposed of. There is, by the way, nothing
wrong with most well-cooked insect protein; worms and grubs are a mainstay in
a number of different cultures.
Steaming corn in the husk works well if you soak the corn in water (preferably
immediately after it is picked, but at any rate as soon as possible), place
it on the grill, and cover it with a wet cloth. It takes only about 15-20
minutes to cook. Leave a little "handle" of stalk on the end of the husk to
facilitate eating; the leaves and the silk will all come off easily. You may
find that cooking the corn on a steel sheet helps keep the fire a bit hotter,
since drips from the wet corn can slow it down.
