If I'm going to use rice I use Uncle Ben's - Minute Rice
tastes terrible, and only takes a few less minutes to cook than regular
rice. With Uncle Ben's, use two cups of water for every cup of rice. If
you want the rice to absorb some of the liquid in whatever you are
cooking, use less water. Boil the water with a bit of salt. When the
water is boiling add the dry rice, cover and cook slowly for about 15
minutes. You DON'T have to look at the rice or stir it - it is still
cooking! After the rice has cooked you can serve it, or set it aside for
10 - 15 minutes without any loss in quality.
Example - Hamburger Guess What
Set two cups of water to boiling. Start frying off 1#
of hamburg
When it boils add two cups of rice. Add one chopped medium
onion
Cook slowly for 10 odd minutes. and 1/2 to 1 chopped
pepper
When
it is cooked, drain grease and
add
1 #10 can of whole tomatoes, chopped.
After the mix has simmered for a few minutes, add rice (which
should be dry and half
cooked by now).
Cook slowly for another 10 odd minutes, adding seasoning to taste.
Possible seasonings - Chili, Cilantro, Salt, Pepper, Onion or
Garlic Salt, Basil, Bay Leaf, etc.
Serves 6-8 as main dish, 14 - 20 as a side dish.
