Cutting Boards

Feel I can add some insight to this topic, as a Certified Food Service
Manager and married to a Hospital Food Service Manager. When I took the
certification course 2 years ago, the subject of wood vs. plastic cutting
boards was discussed. The studies showed that bacteria sem to thrive better
on plastic cutting boards that are _rinsed_ then left out overnight. Plastic
boards _cleaned and sanitized_ will not harbor more bacteria than a wood
board, however the porousness of the wood board make it more difficult to
clean. Wooden boards are also usually heavier and bulkier than plastic.
FWIW, my wife will only use a plastic cutting board, while I prefer wood at
home, but plastic when camping. Bottom line - if you clean and sanitize the
boards it boils down to your personal preference.
