Our High Adventure program in Daniel Webster Council (NH) has quite a
few activities that I'm sure you could do in your area. They are:

Mountain Biking - rent some mountain bikes and take off into some real
mountain trails. You could make it a camping trip by having the camping
gear driven to spots along the trail that come close to civilization.

Sea Kayaking - rent kayaks and take them out on the ocean.

Winter Camping - Maybe if you go further north or east into the
mountains?

Ice Climbing - See "Winter Camping, above".

Canoe/Kayak camping on some island on a lake.

Scuba Diving - Our council doesn't do this, but I know of one troop that
does.

Caving - Our council doesn't do this either, but it sounds like fun.

Roofing my garage

Of course with all the above, you really need a good instructor who does
this often as a hobby or profession. That's one nice thing about our
Trek program - the guides are top-notch. If you're renting gear, I'd
bet that the renter also guides, or at least knows of someone who could
help you out.
