You shouldn't "schedule everything" around one family (you can't) but you
should also do your best to accomodate their beliefs. If they can't attend
Saturdays and school nights are out how about a Sunday afternoon (that's
when all the Pinewoods are around here). Or how about a day or evening
that's a school holiday so running late won't be such of a problem.
You need to talk with this family. Find out where you can comprimise &
change and where they can.
