Or just cook it in a dutch oven. Heat the dutch oven up and place the pie pan
within the oven set up off the floor of the oven with three small pebbles. Bake
and enjoy.

I did some reflector oven cooking this summer and I did not find it very
practical. It might be interesting as a demonstration, but for real
cooking...? But here are my tips, for what they're worth.
You need a HOT fire and this is doubly true for pie baking. Either build a
large, hot fire or do what I did. Pick up an old baking pan at a rummage
sale. Make a chicken wire "lid" and wire it on leaving a couple inches gap
at one long end. You can put your hot charcoal in this pan and stand it up
almost vertical to get most of your heat into the oven.
Practice ahead of time so you don't look like an idiot when you demonstrate.
