I have had success with several versions of dump cakes. Things to note:
use cast iron DUTCH OVEN (not just pot) so the coals will stay in place
on top and so the feet keep the floor hot but not burning.
We put aluminum foil inside to make clean-up easier.
Put the fruit mixture in first, otherwise the dry stuff clumps.
Stir gently (don't tear alum. foil), and FOLD dry into wet. Some of you
know folding is different than stirring. Those that don't, well, it's
easy to show, hard to describe.
BTW: if you ever make a cake in an alum. foil box oven, don't add the sand
at the bottom unless you're prepared to use alot of coals for pre-heating.
I tried that way and RUINED a choc. cake (even I wouldn't eat it) Best to
stick with tried & true methods.
NO NO NO..... the sand at the bottom of the box, not the cake!
