You should especially keep in mind that people are expected to earn a good
part of their money via tips. My cousin's been working as a waitress in New
Orleans, French Quarter. She only got a basic salary of some bucks - the rest
were tips.

If you give less than 15 (or even 10) percent, you may be asked what was
wrong, because this is quite unusual.
